Baking and Pastry

Our comprehensive Baking and Pastry program is designed to prepare students for a rewarding career in baking and pastry creation. Courses will teach students a variety of technical and soft skills used in the baking and pastry field. The curriculum includes:

  • Baking and Pastry Skills
  • Cakes, Tarts and Frozen Desserts
  • Cake Decorating: Wilton Method
  • Wedding Cakes Production and Design
  • Chocolate
  • Desserts: French and International, Frozen and Fruit
  • The Art of Sugar, Marzipan and Pastillage
  • Yeast Doughs and Artisan Breads

In order to receive a comprehensive, well-rounded education, students will take math, business and professional development courses as well. A 240 hour externship course will provide direct, on-site experience creating such things as artisan breads and rolls, pies, cookies, cakes and pastries.
